Twists, turns and meanderings towards the Lord Clyde

Heston’s The Fat Duck, Raymond Blanc’s Le Manoir aux Quat’Saisons, London’s Park Lane Hotel, Noma in Copenhagen, Restaurant Frantzén and latterly Head Chef at Etrop Grange Hotel … Ernst and Sarah’s careers are as colourful as the creativity produced in their kitchen

Born in Cape Town and raised in the heart of the winelands of South Africa, Ernst began cheffing at age of 18 after leaving school. After arriving in the UK at the age 21, he started work at Manchester Airport’s Hilton. He then transferred to the Hilton in Kensington, London for a couple of years. After a short spell at the Hilton in Belfast, he returned to Manchester working at the Radisson SAS. Ernst’s first Head Chef position was at Stanneylands Hotel, a four star establishment in Wilmslow, where he spent a number of years as part of a small team. 

His next position was at the Copthorne Hotel in Sheffield, followed by being appointed as a Practical Cooking Tutor with De Vere academies. Most recently, before walking through the doors at the Lord Clyde, Ernst was Head Chef at Etrop Grange Hotel for nearly three years where he proudly attained two AA Rosettes. During this time he also stageed at The Fat Duck, Restaurant Noma, Le Manoir aux Quat’Saisons and Restaurant Frantzén.

From the age of 16 when Sarah started pot washing in a local pub in Derbyshire, she was drawn to the wonderful world of hospitality. After leaving school she studied Hospitality Management and gained a valuable insight and knowledge of this rather mad, but exciting industry.

As part of her studies she spent three months in the Lake District absorbing all what she was about to let herself in for, and Sarah loved it! So much so, that she was offered a full-time position as the Restaurant Supervisor.  After leaving the Lakes, Sarah worked in a number of places including the Channel Islands before settling in Manchester, where she has now lived for 15 years. After working on Reception at The Golden Tulip Hotel (now Premier Inn) opposite Old Trafford, over a six-year period she was promoted through the departments, finally ending up in Accounts.

In 2007 Sarah joined the Stanneylands Hotel as Financial Controller where she met Ernst, and after three years she was promoted to General Manager. Five years later she decided to jump ship and began working for Malmaison Hotels as Financial Controller before arriving at the Lord Clyde.

Ernst (@ErnieChef) and Sarah (@SarahRichmond4) are avid users of Twitter, and in July 2013 they saw a tweet about The Lord Clyde in Kerridge. Having previously lived in Bollington they knew of the pub and what a beautiful area it was situated in, so they decided to investigate further …

And so the journey began.
